Saffron Risotto with Butternut Squash is one of my favorite last-minute dinners because I can prep all the ingredients and roast the butternut squash in advance, and then simply cook the risotto on top of the stove for 30 minutes while I have a glass of wine with my friends. Sometimes I make believe it’s Tom Sawyer’s white washed fence – if my friends are good, I’ll give them a chance to stir the pot! The sweetness of the roasted butternut squash is a perfect balance with the spicy saffron and creamy risotto. Dinner solved!
