Thanksgiving this year is inevitably going to be different from any other year but I think it’s still important to take the time to celebrate it safely. Even in a pandemic, we can find new things to be thankful for, such as the pleasure of eating Thanksgiving outdoors, where it’s safer and easier to socially distance. This year, instead of cooking a massive dinner for a crowd, I’ve collected my favorite Thanksgiving recipes that serve just four people and I’m calling it a Micro-Thanksgiving. But not to worry, just because it’s small, doesn’t mean that it can’t be absolutely delicious!! Which leads to another thing to be thankful for – a smaller dinner means less to clean-up!
