Tuscan White Bean Soup!

I’m making a lot of soup right now – for lunch and dinner! – because I can make it in large quantities, and it lasts for a week in the fridge. But for it to feel like a full meal, it has to be a hearty soup with lots of flavor and texture. This Tuscan White Bean Soup hits all the right notes - it’s made with dried white beans, sautéed pancetta (you can also use bacon), leeks, onions, carrots, celery, and chicken stock. I let it simmer away while I work from home. I even included notes in case you only have canned beans! If you’re missing other ingredients, this is the time to get really creative with dried herbs and other vegetables! Stay warm and stay safe! xxxx  Ina
